Taking its name from both the river in Iberia and the wine region near Porto, Douro borrows a little taste of everything from all over Portugal—and is transposing that whole country’s inviting spirit onto a tiny spot in the Portland’s rapidly evolving Eastern Waterfront. What Portugal has in spades is what Maine does, too: stellar seafood and access to a dizzying bounty of fresh produce, meats, and other ingredients. But let’s be honest: It’s the seafood that often steals the spotlight. So in crafting a Portuguese menu through a Maine lens, executive chef Colin Wyatt and chef de cuisine Jim Stein focused largely on the sea. That means raw bar fixings that include sweetly acidic marinated mussels, rich lobster salads with salmon roe, and savory, mustard-laden sardine toasts. Main dishes are deeply satisfying and full-flavored—à la steaming bowls of cataplana, the classic seafood stew. Or the velvety halibut with farro, hen-of-the-woods mushrooms, and a perfectly jammy egg.
